Low Carb Recipes – Dark Chocolate Pudding

This creamy, deep, dark chocolate dessert has been one of my go-to low carb recipes. It’s delightful and can be ready to eat in just five minutes. Its rich flavor and creaminess come from cacao powder.  Cacao powder has been found to be one of the best sources of antioxidants on the planet. It is also loaded with nutrients which can improve health and lower the risk of heart disease.

I have found a wonderful appreciation for desserts like this that don’t include such things as dairy and refined sugar.  It allows me to enjoy them without subjecting myself to inflammation and skin irritation. By carefully choosing what I eat and eliminating high inflammatory foods from my diet I have successfully eliminated prescription drugs from my diet.

So try this low carb dessert with no added sugar. Oh, did I tell you it’s naturally sweet?

SERVES 2

Prep: 5 minutes   Active: 5 minutes

¼ cup organic cacao powder

1 large banana

½ tsp vanilla extract

½ tsp cinnamon powder

⅛ tsp nutmeg

2 pinches sea salt.

a fresh sprig peppermint for garnish (optional)

Directions

  1. In a medium sized glass jar, add all the ingredients.
  2. Using an immersion blender, submerge the head, and then turn the power on.  Work this around through the ingredients until they blend into a creamy consistency.
  3. Garnish this with a sprig of fresh peppermint.
  4. Serve and enjoy.
