SoCal Cooler


Soju is a Korean distilled beverage. It’s a mild spirit with a flavor profile between sake and vodka. Drinking is a big part of socializing and doing business in Korea. It’s a common sight to see people drinking at vendor stalls on the street even during the weekdays. Koreans usually eat ‘drinking snacks’ (called an-ju) when drinking alcoholic beverage. Whenever my mom visits, she makes sure there is an-ju whenever Mr. Lunch sips even just a little beer^^
Cool down this summer with this refreshing soju cocktail.

SERVES 1
Total: 65 minutes Active: 5 minutes

GINGER HONEY
3/4 cup ginger, thinly sliced
1 cup honey

9 fresh mint leaves
3 oz./88ml soju
1 1/2 oz./44ml freshly squeezed lime juice
3/4 oz./20ml ginger honey
tonic water
ice
lime peel for garnish
Directions

1. To make the ginger honey: Add the ginger and honey in a small sauce pan. Cook it over low heat for an hour. Strain it to separate the honey.
*Store the ginger honey at room temperature. Don’t throw away the ginger, it’s great to cook with or make ginger candy.

2. Muddle 8 mint leaves in a collins glass.

3. Add the soju, fresh lime juice, and ginger honey. Stir well.

4. Fill the glass with ice.

5. Top up with the tonic water.
